That's a very good question.
You actually can say "üç tane daha bira istiyoruz." Since "tane" is the counting word in Turkish, we can say "üç tane bira daha" or "üç tane daha bira", the first being more common.
Daha is strange, as you noticed. It usually comes before adjectives, but with nouns it is not so. In English, you say "one more apple" but in Turkish we say "one apple more." You never see "daha" between a number and a noun like "bir daha elma."
If you have a quantifier (instead of a number) like "some" or "biraz," then it behaves similarly with "tane" phrases. "Biraz daha elma" or "biraz elma daha" are both possible.

Americans sometimes leave behind the skin of their baked potato. (Warning: Do not do this in front of my mother. She will scold you. "Don't you know that all the vitamins are in the skin?!") Would my mother be pleased at the way Turks eat their kumpir?

Busra and the other Turks around me right now, however, are assuring me that they have never been urged to eat their potato skin and it's considered a bit weird to do so.

Hi Justin, I love Turkish Tea Time! Such a great resource.
One quick point - I just checked in with my boyfriend who is a native Turkish speaker and he says that "Daha sosis istiyorum." isn't correct Turkish. "Daha" should be accompanied by "az" or "biraz".
Can we have an update of the answers / clarification of this point?

When you say: I want much more bread we say: daha fazla ekmek istiyorum. Thus, ekmek comes after daha.
but when we say we want 3 more beers you say: üc bira daha istiyoruz. Thus bira comes before daha!
Why we can't say: üc tane daha bira istiyoruz?
